Describe your baking style in less than 10 words.

Bespoke modern buttercream cakes with natural and high quality ingredients.

How did you get in to the baking industry?

I have always loved baking and eating cake ever since I was a little girl. So when I had to decide what to do with my life after high school it wasn’t surprising that I chose culinary school. Soon after I moved to Australia to start working as a pastry chef and have worked at some of Melbourne’s best restaurants and pastry shops.

What inspires you as an artist?

Everything really. From colours to textures, paintings, design and architecture.

What is your favourite thing about creating a wedding cake?

I love the baking part of it, where the flavour comes alive. But the best part has to be the decorating in the end and seeing the final result. Unfortunately I rarely get to see the couples when they see the cake for the first time, I am sure if I got to see the look on their faces that it would also be a very special moment for me.

When did you discover your love of baking?

I started baking at a very young age in our home kitchen, loving the whole process of it. I mostly baked this favourite chocolate cake of mine with coconut topping, it was the best!

If a couple are not exactly sure about what sort of wedding cake they want for their special day, how do you guide them through the process to achieve the perfect outcome?

I ask them a few questions to figure out what their style is like, what colours they like and what sort of venue they are getting married at. After this I give them a few different options of different designs they can choose from that suit their style or we work together on creating something truely unique.

What do you feel are the key things that make the perfect wedding cake?

The flavour and the looks are both equally important. It has to taste amazing and look beautifully at the same time.

Is there any particular country in the world you would love to visit, just to try their cakes / baking / patisserie?

Japan. I wanted to go for so long now, but haven’t made it yet. I’ve heard so many amazing things about their cakes and desserts.

What is the most important advice you would give your younger self just starting out in the baking industry?

Eating, exploring, travelling. I love seeing new places and trying new things, it keeps me inspired.
